Should you try? Sandwiches worth a try. Definitely try the [free samples] of their Flagship Cheese.
The artisan cheese shop originated in Seattle, but opened a store, café and restaurant in Flatiron in June 2011. As you decide what to order at the café, you can sample their various cheeses. I tried their Flagship cheese and their curds, the former being a very complex cheese with nutty flavor and a touch of sweetness. For lunch, I went with the Grilled Flagship and Fig Sandwich ($7) and a small Tomato Flagship soup ($4.59).
Both were solid (that Flagship cheese would make anything good), but I think they could have had stronger flavors. The fig spread added some nice sweetness, but I was looking for a bolder punch of sweetness. The soup was tasty and I think they were looking for a smoky flavor, but it ended up having a bit of a burnt taste. I do love those burnt pieces of cheese that accompany the sandwich, but I’m not so sure the soup was supposed to have the same flavor. Either way, I would give it a try and if you don’t end up ordering anything, go for the free samples! You mooch.

Can’t wait to try!
